What makes this potato salad so good?

Who doesn’t love a good old-fashioned creamy potato salad recipe arriving on the table at a barbecue? We think the creaminess is key to the success of this recipe. Although you can use mayonnaise, yoghurt or sour cream as your potato salad dressing (or any combo) we can’t look past good ol’ mayo. We’ve added a bit of vinegar too, to give it a bit of acidity.

Ingredients (8)

– 600g nicola potatoes, unpeeled
– 2 middle bacon rashers, rind removed, chopped
– 1 medium brown onion, finely chopped
– 2 hard-boiled eggs, chopped
– 1/2 cup whole-egg mayonnaise
– 1 tbsp Coles organic apple cider vinegar
– 2 gherkins, finely chopped
– 3 green shallot, thinly sliced

Method

Step 1

Cook potatoes in a large saucepan of boiling, salted water for 15 minutes or until tender. Drain. Cool. Peel and chop.

Step 2

Meanwhile, heat a large nonstick frying pan over high heat. Add bacon and brown onion. Cook for 2 to 3 minutes or until brown onion has softened. Transfer to a large bowl. Add potato and egg. Combine mayonnaise and vinegar in a bowl. Add to potato mixture. Season with salt and pepper. Toss to combine.

Step 3

Serve topped with gherkins and green shallot. Serve.

How to hard-boil eggs for potato salad

If you’re going to make potato salad, you’re going to need to hard-boil eggs. It’s a classic ingredient, after all, especially in our best potato salad. Place in a saucepan or large pot. Cover potatoes with cold water. Cover pan. Bring to the boil over a high heat. Reduce heat to medium and simmer for 7 minutes. Place under cold water for 1 minute. Set aside to cool before peeling.

What’s in a potato salad?

Though potato salad recipes vary, the one ingredient that you’ll always find in a potato salad is boiled potatoes (skin on or off). Although our best potato salad recipe features bacon, onion, egg and gherkins (or dill pickles), others contain chives, celery, capers or herbs. This dressing for this incredibly good potato salad is made from mayonnaise, but other potato salad recipes start with a yoghurt or sour cream base and include Dijon mustard (we use apple cider vinegar instead of Dijon mustard for tang in our potato salad recipe and mayo instead of a sour cream mixture). Some even use orange juice instead. If you don’t have green onions or spring onions, you could try adding red onion to your potato salad recipe.

Potato salad with sour cream dressing

Some people prefer the sourness of this great potato salad. And our members also highly recommend this recipe, with a little bit of horseradish thrown into the sour cream mixture for extra flavour and a creamy dressing. While our recipe doesn’t contain any extra virgin olive oil, if your refrigerated leftover potato salad is a little dry you can enliven your creamy dressing with a tablespoon of oil mixed through in a large bowl.
